🛒 Ingredients
- 1 lb lean ground turkey (93%)
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 3 garlic cloves, minced
- 2 tsp fresh ginger
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp cornstarch (to thicken)
- 2 tsp olive oil
- Sesame seeds and green onion to serve
👨🍳 Instructions
- Mix soy sauce, sesame oil, rice vinegar, and cornstarch in a small bowl.
- Heat olive oil in a large skillet or wok over high heat.
- Cook turkey, breaking it up, until no longer pink, about 6 minutes.
- Add garlic and ginger, cook 1 minute.
- Add vegetables, stir-fry 4–5 minutes until tender-crisp.
- Pour sauce over everything, toss to coat.
- Cook 1 minute until sauce thickens.
- Top with sesame seeds and green onion.
