  • 3 large eggs
  • 2 cups baby spinach
  • 1 cup mushrooms (cremini or button), sliced
  • 1/4 onion, diced
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 tbsp fresh herbs (chives, parsley)
  • Black pepper to taste
  • Minimal salt or none

  1. Sauté onion and mushrooms in olive oil over medium heat 5 minutes.
  2. Add garlic and spinach, cook 1–2 minutes until spinach wilts.
  3. Season the filling with pepper.
  4. Beat eggs with 1 tbsp water and pepper.
  5. Move filling to the side, add eggs to the pan.
  6. Lift edges as eggs cook, letting liquid run underneath.
  7. When nearly set, fold eggs over filling.
  8. Slide onto plate, top with fresh herbs.
