- 4 bone-in chicken thighs (skin-on or skinless)
- 4 garlic cloves, minced
- 2 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme leaves
- 2 tbsp olive oil
- 1 lemon, zested and cut into wedges
- 1/4 tsp black pepper
- 1/4 tsp sea salt (reduce or omit for kidney diet)
- 1 cup cherry tomatoes (optional, for roasting alongside)

- Preheat oven to 425°F (220°C).
- Mix olive oil, garlic, rosemary, thyme, lemon zest, pepper, and salt in a small bowl.
- Pat chicken dry. Rub herb mixture all over and under skin.
- Place in a baking dish with cherry tomatoes if using.
- Roast 33–38 minutes until skin is golden and internal temperature reaches 165°F.
- Rest 5 minutes before serving.
- Squeeze lemon wedges over to serve.
