🛒 Ingredients
- 1 cup white rice (not brown — lower phosphorus)
- 2 cups water or low-sodium broth
- 2 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh dill
- 1 tsp lemon zest
- 1/4 tsp black pepper
- Minimal salt (omit if on fluid/sodium restriction)
👨🍳 Instructions
- Sauté onion in olive oil over medium heat 4–5 minutes.
- Add garlic, cook 1 minute.
- Add rice, stir to coat with oil.
- Add water or broth, bring to a boil.
- Cover, reduce to low, cook 18 minutes.
- Fluff with fork. Stir in parsley, dill, and lemon zest.
- Season with pepper. Serve warm.
