🛒 Ingredients
- 1 large head cauliflower, cut into florets
- 1 medium onion, diced
- 3 garlic cloves, minced
- 4 cups low-sodium vegetable or chicken broth
- 2 tbsp olive oil
- 1/4 cup cream cheese (4 oz, softened)
- 1 tsp fresh thyme
- 1/4 tsp white pepper
- 1/4 tsp nutmeg
- Fresh chives and a drizzle of olive oil to serve
👨🍳 Instructions
- Sauté onion in olive oil over medium heat 4–5 minutes.
- Add garlic, cook 1 minute.
- Add cauliflower, broth, thyme, pepper, and nutmeg. Bring to a boil.
- Reduce heat, simmer 20 minutes until cauliflower is very tender.
- Remove from heat. Add cream cheese, blend until completely smooth.
- Return to low heat to warm through. Adjust seasoning.
- Serve topped with chives and a drizzle of olive oil.
